    My Go-To Organic Salad Dressing (That Goes With Everything)

    I eat a lot of salad. Not sad desk-lunch salad, proper salad, with good things in it, that actually satisfies you. And the thing that makes or breaks a salad, every single time, is the dressing.

    I've tried all sorts over the years but I keep coming back to this one. It's been in my kitchen for as long as I can remember and I genuinely make it almost every week.

    You need: a good organic extra virgin olive oil, don't skimp here, the quality makes a real difference, raw apple cider vinegar, a teaspoon of raw local honey, a small clove of garlic crushed, a pinch of sea salt, and a grind of black pepper. That's it. Shake it together in a jar.

    The apple cider vinegar is important to me specifically, it's brilliant for digestion and I notice a real difference when I'm having it regularly. Make sure it's raw and unpasteurised with the mother in it. Bragg's is the one I use.

    What I love about this dressing is that it works on absolutely everything. Roasted vegetables, a simple green salad, leftover grains, even as a quick marinade for fish. Once you've made your own dressing you'll find it very hard to go back to shop-bought. You'll also find it hard to believe you ever paid for something you can make in ninety seconds.
